XAATHA COOKING CLASS & WALKING TOURS

Service Description

In the heart of Mexico City’s Historic Center—among candlelight, marigolds, and the scent of copal—Xaatha, with La Cocina de los Muertos experience invites you to an immersive cooking class that celebrates life through the culinary traditions of Día de Muertos. This is not just a class—it’s a living ritual. Upon arrival, we set the tone with a warm welcome and a short introduction to the altar (ofrenda) you’ll help build. Each participant is invited to bring a photograph of a loved one—even pets are welcome—to place on our shared altar at home. From the very first moment, cooking becomes remembrance, and remembrance becomes community. Guided step by step, we’ll prepare a five-dish menu inspired by the symbolic elements of the altar: • The Earth. • The Water. • The Corn. • The Feast. • The Sweet Memory. 🥃 Guided Tasting: 5 Artisanal Mezcales Throughout the class, you’ll enjoy a curated flight of five mezcales, led by your host: Espadín (benchmark balance), Tobalá (wild, floral), Cuishe/Madrecuixe (woody, mineral), Tepeztate (herbal, peppery), and Jabalí (robust, complex). We’ll explore terroir, roasting, fermentation, ancestral vs. artisanal methods, plus tasting technique (small pours, orange slices, and sal de gusano). Each pour is thoughtfully timed to pair with cooking steps and dishes. (A non-alcoholic pairing with seasonal aguas frescas is available on request.) As you cook, you’ll learn traditional techniques—pressing tortillas, working with masa, balancing chiles and spices—while hearing short stories about the meaning behind each recipe. When the cooking is done, we gather to share the meal we prepared together, just as Mexican families do during Día de Muertos. Across 5.5 hours, the glow of candles, the petals of cempasúchil, the aroma of mole, and the character of mezcal turn the evening into a collective tribute to memory. La Cocina de los Muertos is perfect for cultural travelers, food lovers, and locals seeking to understand Mexico from the inside: by cooking, tasting, and honoring together. Because here, death is not the end—it’s an invitation to gather, cook, and celebrate life.
