Making mole is an act of patience and love. It means toasting, grinding, combining, tasting, and adjusting. It is the art of balancing bitter, sweet, spicy, and earthy flavors. It is cooking with all your senses awake. But mole is much more than a recipe. It is part of Mexico's history, celebrations, family tables, and culinary heritage. Our experience begins in Mexico City's Historic Center, where food and history have been intertwined for centuries. As we walk through its streets, we'll talk about the ancient city of Tenochtitlán, the Mexica civilization, and the traditional neighborhoods that helped shape what is now the heart of Mexico City. We'll then visit a traditional Mexican market, where you'll discover the chiles, spices, seeds, fruits, herbs, and other ingredients that form part of Mexico's extraordinary culinary heritage. Along the way, we'll share stories about Mexican food, everyday life, and the traditions that continue to connect markets, kitchens, and family tables. Learn to Make Mole From Scratch Back in our kitchen, the hands-on Mexican cooking class begins. Together, we'll prepare mole from scratch using traditional ingredients and techniques. You'll learn how to toast and prepare ingredients, work with different Mexican chiles, build layers of flavor, and balance the complex combination of sweet, spicy, bitter, smoky, and earthy notes that makes mole so distinctive. Rather than simply following a recipe, you'll learn to taste, understand, and adjust the mole as it develops. Then we'll sit down together and enjoy the meal we've prepared. ### More Than a Mexican Cooking Class This experience is designed for travelers who want to go beyond simply tasting Mexican food. It's an opportunity to understand Mexico through its markets, ingredients, history, cooking traditions, and the people who keep them alive. You'll leave with new cooking skills and recipes, but also with a deeper understanding of why food occupies such an important place in Mexican culture. Since we do not require full payment in advance to book a class, but only a deposit to secure your reservation, we inform you of the following: Reservation deposits are non-refundable. This amount guarantees your spot in the class and compensates for the potential loss of opportunity for other participants. Therefore, the deposit is non-refundable under any circumstances. Rescheduling is possible. We understand that unforeseen events may occur. That’s why we offer our clients the possibility to reschedule their class at no extra cost, as long as: We are notified at least 5 hours in advance of the scheduled class time. The request to reschedule is made exclusively via WhatsApp to the number provided in your booking confirmation. If we are not notified in time, or in the event of a no-show without prior notice, the deposit will be forfeited and no rescheduling will be offered.
